It is not my wish to suggest another recipe book. In this book you will find my recipes and some of my ideas, but mainly you will find the inspiration and the way to create your own risotto. In its pages I present, based on my experience and knowledge, the techniques that a risotto requires, as well as the tips, the steps that will lead you to the risotto that expresses you. In this book I will show you the way and explain the philosophy, but you will put the personality in the taste.
I will show you how you too will create your own risotto. That is my goal. This is what I do every time I am called to create a risotto. It is one of the dishes that I really give all my attention and energy to when I make them. It is one of the foods that absorbs me so much that I lose the sense of time. It is one of the dishes that mobilizes all my senses.
Risotto is a class in itself. It is not just a dish of delicious rice. It is the beauty of simplicity that has always fascinated me. It is the charm of “bonding” and dedication that is required for something to work and have an effect…
